Tomato Onion Chutney for Idli and Dosa

In Madurai heat, coconut chutney turns by lunchtime. This one does not — which is why it appears on the table far more often than the recipe books suggest. The whole thing rests on cooking the tomatoes down until the raw smell goes; rush that and you get a sour, thin chutney that nobody finishes.
Method

Sauté the aromatics
Heat the gingelly oil and sauté the onion, garlic and red chillies on medium heat until the onion is properly golden — not just softened. This is where the sweetness comes from.

Cook the tomatoes right down
Add the tomatoes and tamarind and keep cooking — 8 to 10 minutes, until they collapse entirely and you see the oil separating at the edges. That separation is the signal. Stop before it and the chutney tastes raw and sour.

Cool, then grind
Cool it completely before grinding — hot mixture in a sealed mixer jar builds pressure and will blow the lid. Grind smooth with salt, adding water only if the mixer struggles.

Temper and pour over
Crackle the mustard seeds in hot oil, add the curry leaves and asafoetida, and pour it over the chutney. Leave it sitting on top until you serve.
Wait for the oil to separate
This is the one thing that separates a good tomato chutney from a sour one. When you can see oil at the edges of the pan and the raw tomato smell has gone, it is ready — not before.
Why gingelly oil
Gingelly (sesame) oil is what gives South Indian chutneys their particular depth, and it holds up to the long cooking without turning bitter. Any neutral oil works, but the result tastes noticeably flatter.
Keeping it
Two days in the fridge, which is a day longer than coconut chutney manages. The tamarind and the thorough cooking are what buy you that. Bring it to room temperature before serving — cold chutney tastes of very little.
For young children
Grind a portion before the chillies go in, or use one chilli instead of four. From about a year, most children manage a mild version alongside idli.
